Modern Wheat Isn't Like It Used To Be →
Speculates that all the cross-breeding has changed wheat so much in the quest for high yields has led to the rise in gluten intolerance and Celiac disease.
Then it talks about the push to block GM-wheat worldwide.
Interesting read.
Around Sound Android App →
Blatant plug for another project of mine:
marksthinktank:
Here’s what I’ve been working on:
*For Android phones* Around Sound (Link to the Android Market)
Description: It is an app that detects loud noises around you while you are enjoying your music with your headphones.
No longer miss sounds of: 1) Your dog barking at something 2) Someone trying to get your attention 3) A car...

Gluten free ice cream cones rumored to be at...
My sister mentioned to me that she saw a box of gluten free cones at Bi-Rite Creamery here in San Francisco. At the time they weren’t promoting it at all.
I’ll try to force myself to have some of their excellent ice cream tomorrow to verify.. it’ll be hard, I know but these are the sacrifices I’m willing to make for this site :p
If you haven’t heard of Bi-Rite Creamery then you must live outside...

Apple Pineapple Muffins - Blue Diamond
So far these are my favorite. There are good sized chunks of apple in the base. I think think that’s what keeps them so moist inside. A lot of gluten free baked goods suffer from a texture issue. Usually they’re pretty dry and hard. On the contrary, these are quite moist and soft. Yay progress. To add to the goodness is a generous amount of rice flour based crumble on top. I’ve...

A New Site
Ok so I’ve launched another site. Mark’s Think Tank
It is a place I can flesh out my thoughts on a minimalist lifestyle, things learned while traveling, politics, technology, and just about anything really. It didn’t fit under the other two sites: Mark’s World Tour or Gluten Free Doesn’t Have to Suck
So there it is. Check it out and let me know what you think.

Gluten Free in Chiang Mai
So happy days.. There’s a gluten free bakery within walking distance from my guesthouse in Chiang Mai! It’s called The Blue Diamond Breakfast Club.
So now a few days a week I’ll take the 5 minute walk and pick up a treat to have with my coffee.
Reviews and pictures are coming. So, far.. brown rice bread, apple pineapple muffins, cinnamon almond muffins, chocolate banana muffins...

Good Description of Gluten's Effects on Your... →
It’s an excerpt from a book about the Paleo diet but goes into great detail of the workings of gluten through your system. A good read for sure.

Gluten Free Breakfast Roundup
Breakfast, what to eat, what to eat, what to eat? Here are six great GF foods for you to try:
1. French Toast
I had missed this one the most. I love french toast and thankfully Udi’s bread is totally french toast-able.
2. Waffles
I’ve not always been the biggest fan of waffles. But, after going gluten free it became one of the breakfast treats that I missed. Slather up some...

Comfort Food Roundup
When first going gluten free it can be overwhelming thinking of all those foods you grew up with that you now can’t have. This post is dedicated to some comfort foods that I like that are now possible sans gluten.
1. Mac and Cheese
Trader Joe’s Gluten Free Rice Pasta and Cheddar
This stuff has the taste, texture and great un-natural color like the original.

Thank you Udi's Gluten Free Foods
Thanks to Udi’s this last weekend my sister and I could carbo load like champs for a 1/2 marathon by stuffing our faces with delicious gluten free pizza. So I think it’s fitting to dedicate a post to Udi’s and give an overview of their products that I’ve tried so far.
Udi’s has a good selection of top notch products including:

Edna's Peanut Butter Chocolate Chip Cookies at...
Last time I was at Whole Foods the only Edna’s products they had were the brownies. This time, they had macaroons and my favorite the peanut butter chocolate chip cookies!
So, I bought some. $7.99 for 6 cookies. A slight discount on the $1.50 each from the farmer’s market.
Since they’re a local company, I inquired with them about how much distribution they have.
