Wow… just wow. These are the best gluten free cookies I’ve ever had. They taste just like regular chocolate chip cookies do. No difference. Perfect.
From the mix you just add 1 egg, 1 tsp. gf vanilla, and… 1 stick of butter. I think it’s safe to say that’s where a lot of the magic comes from.
These absolutely destroy the French Meadow ones. To be fair the French Meadow ones were dairy free, which is a huge handicap.
Anyways there’s not much to say other than if you’re looking for gluten free chocolate chip cookies, get these. Period.
If you’re a gluten free company, try these first before you bring yours to market. This is your competition. You need to be better than this to have a chance and I can’t imagine a better chocolate chip cookie than these. Be warned.

It calls for softened, not melted butter. I didn’t have the patience to wait for the butter to soften so I heated it mildly in a pan and mashed it with a wooden spoon until it was soft-melted-ish. I made sure it wasn’t very warm by removing it from heat early on.
