Udi’s Gluten Free Chocolate Chia Muffin Tops

Man, I really wanted to like these. Udi’s regular chocolate chip muffins are pretty decent. So I thought, hey just the top.. that sounds awesome. 

But oh.. why oh why did they put chia seeds in them?! I want chocolatey goodness to have with my coffee. Not some hippie bullshit attempt at adding a sprinkle of health consciousness by using a buzzword ingredient. 

My disappointment stems from expecting a guilty pleasure snack and getting something tainted. Muffin tops are the best part of the muffin without all the rest. It’s by definition a treat.  

I know chocolate muffins are bad for me. But on occasion, I want one with my coffee. It’s not like adding chia seeds suddenly makes these healthy. They’re still terrible for you and now they taste like crap too!

So yeah, I’d skip these and stick to their regular chocolate muffins.

I even like chia seeds, I add them to greek style yogurt with some honey.. really tasty! But good god, don’t put them in a chocolate muffin. 

I think this is the first Udi’s product that I haven’t liked. I guess everyone’s gotta put out a dud every once in awhile.

Gluten-Free Teriyaki Beef Sandwich

Working my way through the Udi’s hamburger buns… 

So here’s an easy one for you guys: Gluten-Free Teriyaki

It’s pretty much just those two ingredients above: wheat-free tamari and mirin. The mirin is sweet so test it before adding any sugar if you like your teriyaki sweet. I added some chille garlic sauce to add a little kick. Proportions.. um… maybe 4:1 mirin:soy sauce. I’m not really sure. Experiment with it to find the taste you like. Make small batches. 

The sandwich turned out oh-so-good. The beef was some leftover New York cut steak from the 4th reheated in a pan with the teriyaki sauce to glaze it a little bit. Drowned it in mayo and put on a little lettuce and bam.. sandwich heaven. 

Note: Mirin is a type of sake.. so if you don’t cook it off, there will be some alcohol.

Udi’s Gluten Free Hamburger Buns

Spotted these at Whole Foods the other day so I had to pick some up to try them out. 

Expectations were high since Udi’s regular bread is great so it’s pretty hard for them to mess this one up.. just change the shape. 

And luckily, they did it just fine. Yummy Udi’s bread in bun form. 

To make the test interesting I made a sandwich out of whatever I could find in the fridge. This ended up being: mayo, lettuce, hummus, ham, chicken, and beef all on the the lightly toasted Udi’s bun. YUM. 

Udi’s is here to save the 4th of July BBQ! Go get some.

One last thing: The one down-side: Size. I like big f’ing burgers.. so this might get tricky.
